Sweet potato wedges

These sweet potato wedges are the perfect blend of sweet and spicy; seasoned with smoked paprika, brown sugar and garlic, lightly drizzled with olive oil and then roasted in the oven until  soft and buttery. This is a simple recipe that elevates the humble sweet potato from an afterthought to a vegetable deserving of centre stage. 

Healthy and wholesome

This staple root vegetable is great when you want to perk up a savoury dish; its subtle sweetness brings a new flavour dimension to many dishes. I like to cook mine with earthy pulses or use as an alternative topping for pies and bakes. The intense orange colour is a reminder of its salubrious qualities. High in fibre, vitamin A and C (and a multitude of others), these sweet potato wedges are both nutritious and delicious. 

The sugar and spice

To enhance the potatoes natural sweetness I have opted for light brown soft sugar which when heated develops a lovely rich caramel like taste. The harmonious blend of smoked paprika and brown sugar produces a deep spicy sweetness. The potatoes are baked for 25 minutes, just long enough for the skin to slightly crispen and develop a blistered, rustic look.

Perfect pairings

When baked, the paprika and garlic create a smokiness reminiscent of summer barbecues. With this in mind, these wedges would make a great addition to other summery foods such as crisp tofu, corn on the cob or grilled asparagus and peppers. For this recipe I have paired the wedges with my simple tzatziki dip which has a zesty, refreshing taste perfectly complimenting the sweet and spicy wedges. 

The creamy texture and warm sweet flavour can fool you into thinking you’re having something much more indulgent then, and lets be honest here, what is simply just a well seasoned baked potato! But in this instance I am certainly happy to be fooled.

Sweet potato wedges

Buttery soft sweet potato wedges seasoned with smoked paprika, soft brown sugar and garlic. A quick roast in the oven and the sweet spicy wedges are ready to be devoured as a snack or paired with savoury dishes.

Ingredients

  • 2 large sweet potatoes washed and dried
  • 3 teaspoons light brown soft sugar
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon garlic granules
  • 1/4 teaspoon salt
  • Black pepper a pinch
  • 1 tablespoon olive oil

Instructions

  • Pre heat the oven to 200°C/ fan 180°C / Gas 6 and line a baking tray with foil.
  • Prepare the wedges by cutting the potato lengthways into quarters.
  • In a large bowl add the potato and all the seasonings.
  • Drizzle over the olive oil and with a spoon mix together all the ingredients. Then use your hands to gently massage the seasoning mix into the sweet potatoes ensuing the wedges are evenly coated.
  • Place the wedges with the orange fleshy part facing down on the tray.
  • Bake for 25-30 minutes, pricking with a knife to check the wedges are soft and buttery.
