CHOCOLATE ORANGE SOURDOUGH BREAD PUDDING

Jump to Recipe - Print Recipe

This Chocolate Orange Sourdough Bread Pudding is comfort food at its best. Thick slices of sourdough soaked in an orange infused custardy sauce. Then toss in generous chunks of dark chocolate orange and fresh orange slices for extra zest.

The trick is in the crust

For the perfect bread pudding, well my idea of perfect as I know this can be controversial, the sliced of bread should be positioned to ensure the crusts stick out. This way they crisp up nicely in the oven and you get the delightful contrast between the squidgy dough (technical term) and crunchy top.

Ingredients

  • 400 g white sourdough bread sliced
  • 75 g butter softened
  • 500 mls milk
  • 2 large eggs
  • 60 g light muscovado sugar
  • 1.5 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • Zest from 1 orange
  • 2 slices of orange sliced into triangles
  • 80 g dark orange chocolate chopped into small chunks
  • 1 tbsp demerara sugar

Instructions

  • Preheat the oven to 180°C/ 160 C.
  • Grease 18x23cm rectangular tin with butter.
  • Cut the slices of sourdough in half, leaving the crust on. Generously butter one side of each slice; you can use any leftover butter later. Arrange half of the bread in the base of the dish and layer the remaining half on top.
  • In a large mixing bowl, whisk together the milk, eggs, sugar, cinnamon, nutmeg and orange zest.
  • Pour the custard mixture and any remaining melted butter over the bread and leave to soak for 5 minutes.
  • Wedge the slices of orange and dark chocolate chunks between the bread, leaving some to scatter on top. Sprinkle over the demarara sugar and bake for 45-50 minutes.
  • Allow the bread pudding to cool for 15 minutes before serving.
