Maple and nut granola

Lightly sweetened granola made with jumbo oats, cornflakes and peanut butter. This maple and nut granola is full of nutty, crunchy clusters. Pour over coconut yoghurt and fresh fruit for a healthy breakfast that is ideal for sunshine weather.

The ingredients

This granola is crammed full of plant based goodness. I’ve added chia seeds, pumpkin seeds and brazil nuts which are high in protein and healthy fats. Once baked, the seeds and nuts develop a lovely roasted flavour.

I’ve added maple syrup to sweeten the oats and add a deep golden-brown hue. I prefer using maple syrup in baking, it adds a rich flavour to the granola, and with notes of toffee and caramel it makes the granola taste naughtier than it is actually is.

How to get clusters in your granola

In order to get your granola to clump together, yes that is a technical word, you want to really press your granola down into the tin before baking. This allows the syrupy mixture to stick together. After baking allow the granola to completely cool in the tin, then turn out the granola slab and gently break up to form little clusters of maple nutty bliss.

Ingredients

  • 3 tbsp margarine
  • 80 g jumbo oats
  • 50 g gluten free corn flakes
  • 50 g maple syrup
  • 2 tbsp peanut butter
  • 2 tbsp chia seeds
  • 40 g brazil nuts roughly chopped
  • 20 g pumpkin seeds

Instructions

  • Line a 20×20 brownie tin with baking parchment.
  • Pre heat the oven to 200 C / 180 C fan.
  • Melt the margarine in the microwave 10 seconds. Add all the ingredients for the granola into a mixing bowl. Stir well ensuring the mixture is well combined.
  • Scrape the granola out into the baking tin. Press the granola firmly into the tin using the back of a spoon. Place in the oven and bake for 15 minutes.
  • Remove from the oven and allow to cool completely in the tin. Then turn out the granola onto a chopping board and gently break up into clusters.
