Peanut butter and jam porridge

The ultimate vegan breakfast, peanut butter and jam porridge; a nutritious and more importantly, delicious wake up to your morning. Crunchy peanut butter and jumbo oats are gently simmered for added texture along with vanilla and maple syrup for a hint of sweetness. Topped with a chia strawberry jam to make the best combination known to man – peanut butter and jam. Enjoy!

Peanut butter and jam porridge

A winning combination of peanut butter and jam to make the ultimate easy vegan breakfast. Full of texture and flavour, this breakfast will be gone in minutes!

Ingredients

  • 40 g jumbo / steel cut oats
  • 250 mls unsweetened oat milk
  • 1.5 tbsp crunchy peanut butter
  • 1/4 tsp vanilla
  • Good pinch of salt
  • 20 g peanuts roughly chopped

For the chia strawberry jam

  • 85 g strawberries
  • 1 tsp lemon juice
  • 1 tsp chia seeds
  • 1 tsp maple syrup
  • Toasted coconut chips to garnish

Instructions

  • Add the strawberries to a saucepan with 3 tbsp of water and the lemon juice. Bring to a gentle boil, then reduce the heat to low and simmer for 10 minutes.
  • Meanwhile add the oats, oat milk, peanut butter, vanilla and salt to a saucepan. Cook over a moderate heat for 5 minutes until the oats have doubled in size.
  • Remove the strawberries from the heat and stir in the chia seeds and maple syrup.
  • Serve the porridge and top with the strawberry jam, strawberries, chopped peanuts and if desired, toasted coconut chips.
