PEANUT BUTTER RICE (MUPUNGA UNEDOVI)

Ingredients

  • 350 g long grain rice rinsed
  • 600 mls water
  • 1 tsp garlic powder
  • 1 tbsp salted butter
  • 4-5 tbsp smooth peanut butter
  • Salt and pepper to taste

Instructions

Prepare the Rice

  • Start by rinsing the rice under cold water to remove excess starch. This helps the rice cook more evenly. In a medium-sized saucepan, bring 600mls of water to a boil.

Cook the Rice

  • Once the water is boiling, add the rice, garlic powder and salted butter to the pot. Cover and reduce the heat to low, letting it simmer for about 15 minutes. Once cooked, remove the rice from the heat and let it sit with the lid on for 5 minutes to allow it to steam.

Combine the Rice and Peanut Butter

  • Once the rice is ready, gently fluff it with a fork. Add the peanut butter, stirring carefully to combine the two. If the mixture is too thick, you can add a little extra water to reach your desired consistency.

Final Touches

  • Taste the rice and adjust the seasoning with salt and pepper.
