Vegan S’mores Cookies

These giant vegan s’mores cookies are everything you would want in your favourite campfire treat. These chocolate chunk vanilla cookies are crispy on the outside with a gooey marshmallow centre. No-one will be able to resist these vegan treats, especially as they can be prepped in just under 10 minutes!

What are S’mores cookies?

If you think of s’mores then you probably think of roasting marshmallows over an open fire before sandwiching them between 2 digestive biscuits (graham crackers for you American folks). Then of course chowing down on the crunchy-soft mixture and getting your tongue slightly burnt from being too impatient to wait for them to cool. Now if you’re anything like me you’re probably more likely to do this over your fire at home or better yet, under the grill. These little gems only take 10 minutes prep, a quick chill in the freezer and 10 minutes in the oven before you have bakery style marshmallow cookies.

The ingredients 

Now the star ingredients of these vegan s’mores cookies is of course the marshmallow centre. Now that Veganism is trendy, vegan marshmallows are thankfully easy to find and more importantly just as tasty as the traditional sweets. I like to use ‘Dandies’ vegan marshmallows (not sponsored!), they are soft and squidgy and just the right side of sweet. 

As for the chocolate, I prefer to use dark chocolate in my s’mores. The bitter dark chocolate helps balance out the sweetness from the marshmallows. And it means I don’t get that awful sugar rush which can honestly feel just as bad a hangover! Please feel free to replace the dark with dairy free milk chocolate if you want your s’mores to me that more sugary and indulgent. 

For the sugars, use a combination of brown soft sugar and caster sugar. The brown soft sugar helps keep the cookies moist and adds deep caramel notes. Now who doesn’t like caramel?!

Vegan S’mores Cookies

Ingredients

  • 150 g light brown muscovado sugar
  • 100 g caster sugar
  • 100 mls sunflower oil
  • 80 mls oat milk unsweetened
  • 1 teaspoon vanilla extract
  • 350 g plain flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 1/2 tsp cinnamon
  • 150 g dark chocolate chopped into small chunks
  • 8 vegan marshmallows cut into halves

Instructions

  • In a large mixing bowl whisk the light brown and caster sugar into the oil. Then whisk in the oat milk and vanilla.

  • In a second bowl sift in the flour, baking powder, bicarbonate of soda, salt and cinnamon. Stir through the dark chocolate chunks.
  • Fold the wet mixture into the dry ingredients just until all the flour has been incorporated.
  • Form the mixture into 16 balls. Form a dent into the centre of each ball and press in half a marshmallow. Gently roll back into a ball ensuring the marshmallow is covered.
  • Place the balls of cookie dough onto a baking tray and place in the freezer for 30 minutes. Preheat the oven to 200°C/ fan 180°C / Gas 6.
  • Bake the cookies in the oven for 10 minutes. The cookie edges should have lightly browned with the centre remaining gooey. Remove the cookies from the oven and leave to cool completely on the baking tray.

    Loved these! I only baked these for 8 minutes as I prefer a softer cookies and I also wanted the middle to be extra gooey! Best smores cookie ever 🙂
