Chocolate Chia Cookies

Soft and chewy cookies with little crispy bites of chia seed and dark chocolate chunks. These Chocolate Chia Cookies will satisfy your cravings for something sweet and delicious. Oh and they’re made healthier with coconut sugar! These cookies are also gluten free, vegan and refined sugar free meaning everyone gets to enjoy these delicious cookies.

The ingredients 

The secret to amazingly tasty cookies is in the choice of sweetener. These cookies use both coconut sugar and vanilla. The coconut sugar add a delicious caramel flavour while the vanilla brings a delicate sweetness.

Chia seeds are a nutrition powerhouse – high in protein, fibre and full of essential omega 3’s. You can have your sweet treat while getting a healthy boost at the same time! I also love the chewy texture they add to cookies and muffins. 

Use good quality dark chocolate in these cookies. This is no time to be scrimping on the finer stuff! The slight bitterness of dark chocolate makes for an amazing contrast to the sweet, vanilla cookie dough. I’m getting hungry just thinking about these chocolate chia cookies!

How to bake soft and chewy cookies

We all crave the perfect cookie. Cookies that are so pleasingly dense and chewy. The secret lies in the moisture content and choice of sugar. Incorporating more moisture into the cookie dough batter will result in thicker, chewier cookies. You can add more moisture by obviously using more wet ingredients; I’ve used rapeseed oil rather than butter. It’s a healthier alternative and makes for soft, moreish cookies. I’ve also used oat milk for it’s creamy consistency. 

Brown sugar is traditionally used in cookie recipes but here I’ve opted for coconut. Coconut sugar is simply perfect for baking cookies. It retains moisture well ensuring you have extra soft cookies. Plus coconut sugar is unrefined and adds the most divine caramel notes to your bakes.

Ingredients

  • 210 g coconut sugar
  • 50 mls rapeseed oil
  • 60 mls oat or almond milk unsweetened
  • 1.5 teaspoon vanilla extract
  • 275 g gluten free plain flour *can sub for plain in not GF
  • 1.5 teaspoon baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 100 g 70% dark chocolate chopped into small chunks
  • 2 tbsp chia seeds

Instructions

  • In a large bowl whisk the coconut sugar, oil, milk and vanilla.
  • In a second bowl sift in the flour, baking powder, bicarbonate of soda, salt and cinnamon.
  • Fold the wet mixture into the dry ingredients just until all the flour has been incorporated.
  • Stir through the dark chocolate chunks and chia seeds.
  • Cover the bowl and chill the cookie dough in the freezer for 15 minutes.
  • Preheat the oven to 200°C/ fan 180°C / Gas 6. Grease and line 3 baking trays with baking parchment.
  • Remove the cookie dough from the freezer. Form the dough mixture into 14 balls and place on the 3 baking trays. There is no need to flatten the cookie balls as they will spread out once in the oven.
  • Bake in the oven for 10 minutes or until the cookie edges should have lightly browned.
  • Remove the cookies from the oven and leave to cool completely on the baking tray.
