Chocolate Chia Cookies

Soft and sweet cookies with little crispy bites of chia seed and dark chocolate chunks. Made healthier with coconut sugar. These cookies are gluten free, vegan and refined sugar free meaning everyone gets to eat delicious cookies.

Ingredients

  • 210 g coconut sugar
  • 50 mls rapeseed oil
  • 60 mls oat or almond milk unsweetened
  • 1.5 teaspoon vanilla extract
  • 275 g gluten free plain flour *can sub for plain in not GF
  • 1.5 teaspoon baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 100 g 70% dark chocolate chopped into small chunks
  • 2 tbsp chia seeds

Instructions

  • In a large bowl whisk the coconut sugar, oil, milk and vanilla.
  • In a second bowl sift in the flour, baking powder, bicarbonate of soda, salt and cinnamon.
  • Fold the wet mixture into the dry ingredients just until all the flour has been incorporated.
  • Stir through the dark chocolate chunks and chia seeds.
  • Cover the bowl and chill the cookie dough in the freezer for 15 minutes.
  • Preheat the oven to 200°C/ fan 180°C / Gas 6. Grease and line 3 baking trays with baking parchment.
  • Remove the cookie dough from the freezer. Form the dough mixture into 14 balls and place on the 3 baking trays. There is no need to flatten the cookie balls as they will spread out once in the oven.
  • Bake in the oven for 10 minutes or until the cookie edges should have lightly browned.
  • Remove the cookies from the oven and leave to cool completely on the baking tray.
